Asian Stir-Fry

What's in the fridge:
1/2 bag Asian rice noodles
1/2 can coconut milk
10-15 shrimp (thawed and shelled)
10-15 Brussels sprouts, cooked and chopped
1/2 onion, chopped
Fresh mint to garnish

- Soak noodles in water for approx 30 min, then drain

Noodles and shrimp
- Sauté onions for about 5 minutes then add brussels sprouts.  Continue until brussels sprouts start to brown (10-15 minutes).

- Add in shrimp and cook until pink, about 4-5 minutes

... and shrimp
- Add in noodles and coconut milk, mix together for about 5 more minutes - breaking up the noodles when possible.

Mix it all together

- Add mint before you plate and serve!

This dish would have been great with a few squirts of lime if you happen to have some!
