Lobster Quiche

Still working through the lobster in my freezer.  This time around a went for a super easy quiche, because quiches are always easy (and delicious).

What's in the fridge:
- 4 eggs
- 3/4 cup milk
- 3 scallions chopped
- 1 1/2 cup cooked lobster, chopped
- 6 slices brie
- Pre-made quiche pie crust

Directions:
- Preheat oven to 375
- Whisk eggs and milk together
- Add and mix in scallions and lobster
- Pour into quiche crust
- Arrange brie slices on top of liquid

Uncooked quiche
 - Cook quiche in oven for approx one hour, or until quiche no longer jiggles.

Quiche out of the oven

Served here with baked brussel sprouts
