Chicken Sausage in Onion & Tomato Sauce

A very easy fix for those left over frozen pearl onions - from boeuf bourguignon in my case.
Enjoy!

What's in the fridge (serves 2):
- 3 chicken sun-dried tomato sausages sliced lengthwise
- 1 large tomato
- 1/2 container mushrooms
- 2 handfuls frozen pearl onions
- Sliced (cooked) potatoes
- Parmesan cheese for toppings

Directions:
- Heat skillet with approx 2 TBSP olive oil to med-high
- Add chicken sausages (flat side down) and pearl onions and cook until sausages are browned (5-8 minutes)

 - Meanwhile chop tomato and slice mushrooms

 - Flip chicken sausages and add tomatoes and mushrooms and a few TBSPs of olive oil

Ingredients in the skillet
 - Let simmer and cover for about 10 minutes to allow the tomato to get juicy

Ingredients after simmering in the skillet
 - Plate over sliced baked potatoes and top with shredded Parmesan
