All About Artichokes

Okey dokey, Artichokey - you have to love artichokes for this one!

What's in the fridge:
1 package artichoke stuffed raviolis
1 can artichokes
1/2 cup sour cream
1/2 TBSP minced garlic
1 tsp lemon juice
Chopped walnuts for topping
Fresh Parmesan for topping

Directions:
- Cook ravioli according to package directions
- Meanwhile, mix together in food processor: artichoke hearts (drained), sour cream, minced garlic and lemon juice

                   

Artichoke Mixture

- Once ravioli is cooked, drain and return to low heat and mix together with artichoke mixture
- Plate and top with chopped walnuts and Parmesan.  


Bon Appetit!

Like any pasta sauce, this can be used with any type of pasta.  It would also be a delicious topping to gnocchi.  Enjoy!
