Spinach Home Fries

It's about time we have a brunch fridgespiration!  Here you have it: spinach home fries topped with a fried egg... because everything is better with a fried egg on top, and what's brunch without eggs?!?!  Also, added bonus, you get to use the iron skillet for this one.

What's in the fridge:
- 3 small potatoes cut into bite size pieces
- 4 strips of bacon
- About 1 cup of cooked frozen spinach
- 1/2 cup milk
- 1 cup mild white cheese
- 1 egg
- 1 TBSP spices (suggested: lemon pepper, garlic, or herbes de provence)

Directions:
- Preheat oven to 300
- Heat oil in an iron skillet to med-high
- Add potatoes, S&P and any other spices if desired (lemon pepper used here).  Stir frequently.
- Meanwhile, cook bacon in a separate pan or skillet.  When done (crispy) keep bacon grease in pan to use later.

 - Once potatoes are browned (about 10 minutes) add spinach and milk.  Quickly stir to coat potatoes evenly

- Crumble bacon into bacon bits and add to potato mixture, mix together.
- Evenly spread cheese over potato mixture then place skillet in oven

Ready for the oven

 - Reheat pan with bacon grease and add egg to pan once hot.  I only had one egg on hand, but would suggest using two eggs here.

 - When the egg is just about done, add to the skillet that is already in the oven.  Cook for 5 more minutes

Add egg
 - Plate and serve!  Bon appetit!
