Spinach Chicken with Squeaky Cheese

I was recently up in Montreal and was thrilled that I got in a trip to the Atwater Market.  After drooling over the cheeses and fresh vegetables, I picked up some cheese curds and maple butter.  Cheese curds is the type of cheese the Quebecois put on poutine.  It's delicious, you can't get it here, and it squeaks!

Spinach Chicken with Squeaky Cheese

What's in the fridge:
5 strips of bacon
2 chicken breasts
1 egg, whisked
1/2 cup panko crumbs
1 cup (approx) frozen spinach
1 TBSP lemon pepper seasoning
1/2 cup cheese curds (can use mild mozzarella)
Pasta for 2

Directions:
- Fry the bacon

- Meanwhile, bread the chicken breasts by dipping them in the egg (with a little water added) then the panko crumbs.

- Once the bacon is crispy, remove from pan onto paper towels.  Keep bacon grease in pan.
- Fry breaded chicken in bacon grease on medium or medium high heat (about 5 minutes per side)

 - Remove chicken breasts from pan and add frozen spinach.  *If there is an excessive about of bacon grease left remove it from the pan.  Watch out for splatters!

 - Add about 3/4 cup of water to the pan (still on medium or medium high heat) and lemon pepper seasoning
- Add chicken to spinach mixture and cover for 15 minutes
- Continue cooking uncovered for 10 minutes to let the spinach mixture reduce

Chicken and spinach mixture
- Plate chicken (on top of pasta here), scoop spinach on and next to the chicken, then top with cheese curds and bacon.
