Chicken Curry Salad

More chicken!  Shaws had the family pack on sale.  Bock bock bock begowwwwk!

What's in the fridge:
2 chicken breasts
1 tomato chopped
3 scallions sliced
1 1/2 tbsp mayonnaise
1 tbsp curry (or to taste)

- Cook chicken breasts on stove, about 7-8 minutes each side on med-high.  Chop into bite size pieces and let cool.
- Combine tomato and scallions in a bowl with salt to taste.

 - Add chicken, mayonnaise and curry to tomato and scallion mixture.

- Mix together and serve! I paired it with a steamed artichoke and melted butter with lemon juice.  Plenty of chicken curry salad for leftovers :)
