Eggplant Parm Round 2

It can be tricky when you have an awkward amount of leftovers - you either end up over full or left hungry, unless you make it into a new meal all together!  I had a bit of eggplant parm left over from this recipe, left over garlic bread and marinara sauce to play with for this fridgespiration.

What's in the fridge:
1 chicken breast halved horizontally 
Left over eggplant parmesan
Left over garlic bread
2 spoonfulls marinara sauce
1/4 cup shredded mozzarella

Directions: 
- Pound chicken flat
- Cook the chicken on med heat until browned on both sides

- While the chicken is cooking, roughly chop the garlic bread


- Top the chicken with shredded motz then top with garlic bread
- Dollop marinara sauce on top of garlic bread then top with left over eggplant parmesan.  Cover and leave on low heat for about 5-7 minutes or until eggplant is warm.


 I added some more of the left over garlic bread and some roasted cauliflower for this meal to make it a complete hodgepodge:
