Deconstructed Ham & Cheese Sandwich

Ham and cheese (swiss to be exact) sandwiches have been in my lunch bag since I graduated from pb&j...  well, until I started bringing in yummy fridespiration leftovers.  Anywho, ham and cheese are staples in my fridge... but don't always end up in a sandwich.

What's in the fridge:
Tortilla
1 TBSP Garlic oil (or just olive oil and minced garlic)
2 slices of ham
1 slice of swiss cheese
3ish slices onion
Lettuce
Salad Dressing: I use a homemade dijon vinaigrette (directions following salad instructions)
1/2 tomato, diced

Directions:
- Preheat oven to 350
- Spread garlic oil on tortilla and place in oven.  Pop the bubbles that will form with a fork and bake until it browns (careful, this will happen QUICK! Guesstimate: 4 min.)

- Saute onions until brown on med-high (5-7 minutes)
- Turn the heat to low.  Slice ham and add to onions for about 3 minutes



- Mix lettuce, tomato and salad dressing. 
- Top with onion and ham and cheese cut into bite size pieces.
- Break apart the now crispy tortilla and use to frame the salad.  Add extra pieces on top.  There you go - deconstructed ham & cheese sandwich!

My favorite salad dressing: learned in St. Vallier, France in 1995, merci a mes amies francaises!
- Whisk together 1 TBSP dijon mustard (preferably Maille brand) and about 1 tsp red wine vinegar and a tasting of salt
- Continue whisking and add in about a cup of sunflower oil - very slowly.  Use olive oil if you don't have or can't find sunflower oil.
