In desperation, and to use up some goodies I had in the fridge, I made this summery salad the other night. I'm horrible at getting my salads in during the colder months... and they are so easy, there really is no excuse!
Here it is. We'll call this the summery arctic salad.
What's in the fridge:
- Lettuce (washed and torn into manageable sized pieces)
- Strawberries (sliced)
- Hard boiled egg (sliced)
- Roast chicken breasts (diced)
Directions:
Throw it all together and top it with your favorite dressing (caeser dressing here). Easy peasy.
