MB's Summer Rice Salad

Finally time to go to the grocery store, I stocked up on veggies for this super easy rice salad.  It's perfect for making a weeks worth of lunches.

What's in the fridge:
1 1/2 cup uncooked white rice
Olive Oil
1 yellow squash
2 hard boiled eggs
4 mushrooms
2 scallions
1 tomato
small handful of green beans
3/4 block of cheddar cheese
Mustard vinaigrette (2 TBSP mustard, 1 tsp red wine vinegar, and 3/4 cup olive oil whisked together)

Directions:
- Cook rice and let cool
- Chop all the ingredients and place in bowl with the rice

Vegetables in rice
- Mix all the ingredients and add mustard vinaigrette to taste.
